
Preheat the oven to 350 degrees.
Trim fat from the pork and place onto a broiler pan or baking sheet coated with cooking spray.
Combine apple cider vinegar, soy sauce, mustard, rosemary, salt, and pepper in a small bowl; brush over pork. Put meat in the oven and roast for 20-25 mins per side or until thermometer registers 160° (slightly pink).
While pork is baking, heat a nonstick skillet over medium-high heat until hot. Peel and slice the apples into wedges and saute them for 5 minutes or until lightly browned. Reduce heat to low, and add 4 tablespoons of sugar free maple syrup. Simmer for 10 minutes or until apples are tender, stirring occasionally.
Remove pork from oven and cut crosswise into slices. Spoon cooked apples over pork. Serve hot.
